Dough
4 1/2 cup's flour
1/2 cup shortning
1 1/2 TBSP Salt
1 cup water.
Filling
Ground beef
Taco seasoning
1/4 onion copped
Grated cheese
2 tsp oil
Egg Wash:
1 egg
1TBSP water
Start by making the dough, mix salt, and flour then add shorting until crumbly, then add water one table spoon at a time until the dough is mixed into a nice ball. Then put in saran wrap and refrigerate for an hour.
Filling: put 2 tsp of oil in a skillet. Add the onions and let brown for a few minutes, then crumble ground beef into pan. stir until browned. Add Taco seasoning, and put in the fridge.
After an hour of the dough cooling take it out put flour on counter, and roll out the dough. Use a round cookie cutter to cut circles, I flattened them out after I cut the circles a little more too. Then put the meet and cheese in the middle and use the egg wash, and put a little all around the edges, then fold the dough in half over the empanada. secure with fingers pinching all openings closed. Then you can either bake them or deep fry them. But I baked. So the oven needs to be at 350 and then put egg wash on top of the empanada's and bake for 12- 15 mins! Delicious
For the Cream cheese apple cinnamon
3 Firm baking apples ( I just used whatever I had at home)
1 cup granulated sugar
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
The recipe I found said to peel and core apples. I didn't peel mine so whatev. Place apples, sugar, cinnamon, and nutmeg into a saucepan over medium heat. Stirring constantly, until apples are soft. remove from heat put in the fridge to cool. Then use the same technique as the taco empanada's but I put cream cheese in the middle of the dough, and then added the apples. Then at the end do the egg wash, and I put a little cinnamon sugar on top. Baked for 12-15 mins. I think the recipe will make like 15 empanada's I just halfed it and made half taco, half apple.

Chocolate cupcakes with amazing cream cheese frosting
I LOVE cream cheese frosting and this is the recipe I found and I LOVE it!!

- 1 (8 ounce) package of cream cheese, softened ( the recipe calls for 2, but I can't read so I only put one in and loved it)
- 1/2 cup butter, softened
- 2 cups confectioners' sugar
- 1 teaspoon vanilla extract
Reese's pieces cupcakes
Chocolate Reese's pieces cupcakes with Peanut Butter Frosting.
For these I just used a chocolate cake mix. BUT made the frosting from scratch
Frosting Recipe:
- 1/2 cup butter, Softened
- 1 cup creamy peanut butter
- 3 tablespoons, milk
- 2 cups of confectioners' sugar
Place the butter & peanut butter into a medium bowl, beat with an electric mixer. Gradually mix in sugar, and when it starts to get thick, incorporate milk one tablespoon at a time, until sugar is well mixed. beat until fluffy!
Red Velvet Cheesecake Brownies!
I made these gem's about a week ago! So delicious!!
Ingredients:
Brownie Mix
- 1/2 cup butter
- 2-oz dark chocolate, coarsely chopped
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 tsp red food coloring
- 2/3 cup all purpose flour
- 1/4 tsp salt
Cheese Cake topping
- 8-oz cream cheese, room temperature
- 1/3 cup sugar
- 1 large egg
- 1/2 tsp vanilla extract
Directions:
- Preheat oven to 350F. Butter the bottom and sides of a 8 inch metal baking pan. Put a long piece of parchment paper in the bottom of the pan, letting the parchment extend up two sides of the pan and overhang slightly on both ends. (This will make it easy to remove the bars from the pan after they have baked.) Butter the parchment.
- In a small, heatproof bowl, melt butter and chocolate together. Stir until combined and very smooth. Set aside to cool for a few minutes.
- In a large bowl, whisk together sugar, eggs, vanilla extract and red food coloring. Add chocolate mixture and stir until smooth. Add flour and salt and stir until just combined and no streaks of dry ingredients remain.
- Pour into prepared pan and spread into an even layer.
- To prepare cheesecake mixture, beat cream cheese, sugar, egg and vanilla extract in a medium bowl until smooth. Distribute the cheesecake mixture in 8 dollops over batter in the pan. Swirl in with a knife or spatula.
- Bake for 35-40 minutes, until brownies and cheesecake are set. A knife inserted into the cheesecake mixture should come out clean and the edges will be lightly browned.
- Let cool completely in pan on a cooling rack before lifting out the parchment paper to remove the brownies.

Bridal shower cake!
Okay, so this is the cake I made for Jessica's Bridal shower. Or should I say cakes. The one on the left is suppose to be a guy ( I know what I would change to make it better Chest hair like megan's and a belly button, and make his package bigger!) and on the right is the Lady cake! it was my first cake like this and I just copied the picture of the one Megan made. It turned out pretty good. It was a big hit. I made my own fondant for the skin it actually turned out pretty darn good! I was super proud of myself. The purple, and black was already made fondant that I had left over from previous cakes! I am still working on perfecting how I put it all together, but I think I did pretty good! :D

Zucchini Chocolate chip Bread.
I absolutely LOVE zucchini bread! I was in the mood for it, so I got some zucchini's and chocolate chips and it was delicious!
Recipe:
* 3eggs
* 1 cup oil
* 1 cup granulated sugar
* I cup Brown sugar ( i like to use splenda n brown sugar
* 2 cups grated zucchini
* 3 cups flour
* 1 tsp. Baking soda
* 1 tsp Salt
* 3 1/2 tsp cinnamon
* 1/4 tsp baking powder
* 1 tsp vanilla extract
* 1 bag of chocolate chips. (if you like lot's of chocolate chips) I also use milk chocolate.
* Grease baking pans. (I use the ones from the grocery store that are disposable.) Combine eggs, oil, sugar, brown sugar, zucchini, and vanilla. Mix well. In a bigger bowl mix flour, cinnamon, salt, baking soda, and baking powder. Stir in chocolate chips. Bake at 350 degrees for one hour. or until toothpick inserted into the middle comes out clean.
